Homemade Gluten-Free Perogies Recipe

Ingredients:

For the Dough:

  • 2 cups gluten-free all-purpose flour (ensure it contains xanthan gum)
  • 1 tsp salt
  • 1 egg
  • ½ cup warm water (adjust as needed)
  • 1 tbsp olive oil (or melted butter)
  • 1 tbsp apple cider vinegar

For the Filling:

  • 1 cup mashed potatoes (about 2 medium potatoes)
  • 1 cup ricotta or farmer’s cheese (optional)
  • Salt and pepper to taste
  • 1 medium onion, finely chopped (optional)
  • 1 tbsp butter (for sautéing)

Instructions:

  1. Prepare the Filling:
    • In a pan, sauté the finely chopped onions in 1 tbsp butter until soft and golden.

  2. Make the Dough:
