Blueberry Almond Oat Cake with Yogurt and Stevia

Blueberry Almond Oat Cake with Yogurt and Stevia:

Recipe Introduction

This Blueberry Almond Oat Cake is a delicious, healthy treat made with oats, almonds, yogurt, and sweetened with stevia. The combination of these ingredients creates a moist, flavorful cake that’s perfect for breakfast or a light dessert. The blueberries add a burst of sweetness, and the yogurt makes it extra creamy. Best of all, it’s a healthier option without refined sugars!

Ingredients:

  • 1 cup rolled oats (or oat flour if preferred)
  • 1/2 cup ground almonds (or almond flour)
  • 1 cup plain Greek yogurt
  • 1/2 cup stevia (or another sweetener of your choice)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup almond milk (or any milk of your choice)
  • 1/2 tsp cinnamon (optional for extra flavor)
  • Pinch of salt

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8-inch round cake pan with parchment paper or lightly grease it.
  2. Mix the Dry Ingredients: In a bowl, combine the rolled oats, ground almonds, baking powder, baking soda, cinnamon, and salt. Stir well to mix all the dry ingredients together.
  3. Mix the Wet Ingredients: In another bowl, whisk together the eggs, Greek yogurt, stevia, vanilla extract, and almond milk until smooth and well combined.
  4. Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and stir until just combined. Make sure there are no lumps, but don’t over-mix the batter.
  5. Add the Blueberries: Gently fold in the blueberries to the batter, making sure they’re evenly distributed.
  6. Bake the Cake: Pour the batter into the prepared cake pan and spread it out evenly. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve: Allow the cake to cool for a few minutes in the pan, then remove it from the pan and transfer to a wire rack to cool completely. Slice and enjoy!

Tips:

  • You can add chopped almonds on top before baking for extra crunch.
  • For a dairy-free version, you can substitute the Greek yogurt with a dairy-free yogurt and the almond milk with any plant-based milk.
  • If you prefer a sweeter cake, you can adjust the amount of stevia or use another sweetener.

Enjoy
