This Gluten-Free Cherry Cobbler is the perfect treat to enjoy any time! A delicious mix of sweet and tart cherries, topped with a crumbly, buttery topping. It’s easy to make and completely gluten-free, perfect for anyone with dietary restrictions!
Ingredients:
FOR THE CHERRY FILLING:
- 4 cups fresh or frozen cherries, pitted
- 1/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1/2 teaspoon lemon juice
FOR THE TOPPING:
- 1 cup gluten-free all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, cold and cut into small cubes
- 1/4 cup milk (or dairy-free milk)
- 1 teaspoon vanilla extract
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9-inch round baking dish.
- Prepare the Cherry Filling:
- In a large bowl, combine the cherries, sugar, cornstarch, vanilla extract, almond extract (if using), and lemon juice. Mix everything together until the cherries are evenly coated.
- Transfer the cherry mixture into the prepared baking dish.
- Make the Topping:
- In a separate bowl, whisk together the gluten-free flour, sugar, baking powder, and salt.
- Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
- Stir in the milk and vanilla extract until just combined. The mixture should be thick but spreadable.
- Assemble the Cobbler:
- Spoon the topping over the cherry filling in the baking dish, spreading it out gently. Don’t worry if it’s not completely even – it will spread as it bakes.
- Bake:
- Bake for 35-40 minutes, or until the topping is golden brown and the cherries are bubbling.
- Cool and Serve:
- Let the cobbler cool for a few minutes before serving. You can enjoy it warm on its own or with a scoop of vanilla ice cream.
Enjoy this sweet and cozy Gluten-Free Cherry Cobbler with every bite!
