🦐 Shrimp Fried Rice Recipe

🧾 Ingredients (2–3 servings)

  • 250 g shrimp, peeled & deveined
  • 3 cups cooked rice (preferably cold, day-old)
  • 2 eggs
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • ½ cup mixed vegetables (carrot, peas, bell pepper, green onion)
  • 2–3 tbsp soy sauce
  • 1 tsp oyster sauce (optional but recommended)
  • ½ tsp paprika or chili powder
  • Salt & black pepper to taste
  • Fresh parsley or green onions, chopped (for garnish)

👩‍🍳 Instructions

  1. Season & cook shrimp
    • Season shrimp with salt, pepper, and paprika.
    • Heat 1 tbsp oil in a pan, cook shrimp 1–2 minutes per side until golden.
    • Remove and set aside.
  2. Scramble eggs
    • In the same pan, add a little oil if needed.
    • Beat eggs and scramble lightly. Remove and set aside.
  3. Sauté vegetables
    • Add remaining oil.
    • Sauté onion and garlic until fragrant.
    • Add vegetables and cook 2–3 minutes.
  4. Add rice
    • Add cooked rice, break up clumps.
    • Stir-fry on high heat for 3–4 minutes.
  5. Season
    • Add soy sauce, oyster sauce, pepper, and adjust salt.
    • Mix well.
  6. Combine everything
    • Return shrimp and eggs to the pan.
    • Toss gently for 1–2 minutes until heated through.
  7. Finish & serve
    • Garnish with chopped parsley or green onions.
    • Serve hot.

⭐ Tips

  • Cold rice gives the best texture (not mushy).
  • Add a splash of lemon juice for freshness.
  • For spicy version: add chili flakes or sriracha.
