Shrimp Fried Rice Recipe
Ingredients (2–3 servings)
- 250 g shrimp, peeled & deveined
- 3 cups cooked rice (preferably cold, day-old)
- 2 eggs
- 2 tbsp vegetable oil (or sesame oil for extra flavor)
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- ½ cup mixed vegetables (carrot, peas, bell pepper, green onion)
- 2–3 tbsp soy sauce
- 1 tsp oyster sauce (optional but recommended)
- ½ tsp paprika or chili powder
- Salt & black pepper to taste
- Fresh parsley or green onions, chopped (for garnish)
Instructions
- Season & cook shrimp
- Season shrimp with salt, pepper, and paprika.
- Heat 1 tbsp oil in a pan, cook shrimp 1–2 minutes per side until golden.
- Remove and set aside.
- Scramble eggs
- In the same pan, add a little oil if needed.
- Beat eggs and scramble lightly. Remove and set aside.
- Sauté vegetables
- Add remaining oil.
- Sauté onion and garlic until fragrant.
- Add vegetables and cook 2–3 minutes.
- Add rice
- Add cooked rice, break up clumps.
- Stir-fry on high heat for 3–4 minutes.
- Season
- Add soy sauce, oyster sauce, pepper, and adjust salt.
- Mix well.
- Combine everything
- Return shrimp and eggs to the pan.
- Toss gently for 1–2 minutes until heated through.
- Finish & serve
- Garnish with chopped parsley or green onions.
- Serve hot.
Tips
- Cold rice gives the best texture (not mushy).
- Add a splash of lemon juice for freshness.
- For spicy version: add chili flakes or sriracha.
