Hearty Vegetable Soup (Simple & Healthy)

Ingredients
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, peeled & cubed
- 1 zucchini, diced (optional)
- 1 garlic clove, minced
- 1 tsp turmeric (for color & flavor)
- ½ tsp black pepper
- 1 tsp dried herbs (parsley, thyme, or oregano)
- Salt to taste
- 1.2–1.5 liters vegetable broth or water
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté base: Heat olive oil in a pot over medium heat. Add onion and cook until soft (3–4 minutes).
- Add vegetables: Stir in carrots, celery, potatoes, and zucchini. Cook for 5 minutes.
- Season: Add garlic, turmeric, black pepper, herbs, and salt. Mix well.
- Simmer: Pour in broth/water. Bring to a boil, then reduce heat and simmer 20–25 minutes until vegetables are tender.
- Finish: Taste and adjust seasoning. Garnish with fresh parsley. Serve hot.

- For a thicker soup, mash a few potato cubes in the pot.
