Old-Fashioned Chocolate Pie

  • 4 large egg yolks
  • 1/2 cup vegetable oil
  • 1 cup whole milk
  • 4 tablespoons unsalted butter

Instructions:

  1. Prepare the Filling:
    • In a medium saucepan, whisk together the granulated sugar, cocoa powder, cornstarch, and salt until well combined.
    • Gradually add the whole milk and stir until smooth. Cook the mixture over medium heat, constantly stirring, until it thickens and comes to a boil (about 5-7 minutes).
    • Once the mixture reaches a boil, remove it from the heat.
  2. Temper the Egg Yolks:
    • In a separate bowl, beat the egg yolks. Slowly pour about 1/2 cup of the hot chocolate mixture into the egg yolks, whisking constantly to prevent the eggs from curdling.
    • Gradually whisk the egg yolk mixture back into the saucepan with the remaining chocolate mixture. Return the saucepan to the stove over medium heat, stirring constantly until the mixture thickens further (about 2-3 minutes).
  3. Finish the Filling:
    • Once the filling has thickened, remove it from the heat. Stir in the butter and vegetable oil until the butter is fully melted and the mixture is smooth. Add vanilla extract, if desired, for extra flavor.
  4. Assemble the Pie:
    • Pour the chocolate filling into the prepared, cooled pie crust. Smooth the top with a spatula.
    • Allow the pie to cool at room temperature for about 30 minutes, then refrigerate for at least 2-3 hours to let it set properly.
  5. Serve:
    • Once the pie has set, top it with whipped cream and shaved chocolate if desired. Slice and serve the creamy, decadent chocolate pie.
