Recipe: Hearty Beef and Vegetable Stew

Ingredients:
- 1 lb ground beef
- 4 medium potatoes, peeled and diced
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup green beans, cut into 1-inch pieces
- 1 cup peas (frozen or fresh)
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth (or more, depending on desired consistency)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (optional)
- 1/2 teaspoon paprika (optional)
Instructions:
- Cook the Beef: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
- Sauté the Vegetables: Add the chopped onion and minced garlic to the pot with the beef and cook for 2-3 minutes until softened.
- Add the Broth and Vegetables:Add the diced potatoes, corn, green beans, peas, diced tomatoes (with juice), and beef broth to the pot. Stir to combine.
- Season the Stew: Season with salt, pepper, thyme, and paprika. Adjust the seasoning to taste.
