Ingredients:
- 2 eggs
- 100 g sugar
- Zest of 1 lemon
- A pinch of salt
- 100 ml sunflower oil
- 100 g natural yogurt (or sour cream or kefir)
- 200 g flour
- 10 g baking powder
- 1 can of peaches (or fresh peaches, sliced)
Instructions:
- Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, whisk together the eggs and sugaruntil the mixture becomes light and fluffy.
- Add the lemon zest, pinch of salt, sunflower oil, and natural yogurt (or sour cream or kefir) to the bowl. Mix well until smooth.
- Sift the flour and baking powder into the bowl and gently fold them into the wet ingredients until just combined.
- Spoon the batter evenly into the muffin tin, filling each cup about 2/3 full.
- Top each cake with a slice or two of peach (fresh or from a can), placing them gently on the batter.
- Bake the cakes in the preheated oven for 18-20 minutes or until golden and a toothpick inserted into the center comes out clean.
