Classic Apple Pie

Ingredients:

For the crust:

  • 2 1/2 cups all-purpose flour

  • 6 large apples (Granny Smith or Honeycrisp work well)

  • 1 tablespoon cornstarch

  • 1 tablespoon butter (for dotting on top)

For the glaze:

  • 1 egg (for egg wash)
  • 1 tablespoon milk or water

Instructions:

  1. Make the crust: In a large bowl, combine the flour, salt, and sugar. Add the chilled butter and use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs. Gradually add ice water, a tablespoon at a time, and stir until the dough begins to come together. Divide the dough into two portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the filling: Peel, core, and slice the apples. In a large bowl, toss the apple slices with granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and salt. Set aside to allow the flavors to meld.
  3. Preheat the oven: Preheat your oven to 375°F (190°C).
  4. Assemble the pie: On a lightly floured surface, roll out one portion of the chilled dough into a circle large enough to fit a 9-inch pie dish. Carefully transfer it to the pie dish and trim the edges. Fill the pie with the apple mixture, making sure to mound the apples slightly in the center. Dot the filling with small pieces of butter.
  5. Top the pie: Roll out the second portion of dough and place it over the apples. Trim the edges and crimp the dough together to seal the pie. Use a sharp knife to cut slits in the top crust to allow steam to escape. Brush the top with a mixture of beaten egg and milk or water (egg wash) to give it a golden color when baked.
