Crispy Spinach & Cheese Phyllo Cups Recipe

Ingredients (Makes 12 cups)

  • 6 sheets phyllo (filo) pastry
  • 3 tbsp melted butter or olive oil
  • 2 cups fresh spinach, chopped
  • 200 g cream cheese, softened
  • 100 g feta cheese, crumbled
  • ½ cup mozzarella cheese, shredded
  • 1 egg
  • 1 garlic clove, minced
  • ½ tsp salt

  • 1 tsp dried oregano or thyme

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Lightly grease a 12-cup muffin tin.
  3. Cut phyllo sheets into squares. Layer 3 squares per muffin cup, brushing each layer with melted butter.
  4. In a bowl, combine spinach, cream cheese, feta, mozzarella, egg, garlic, salt, pepper, and herbs.
  5. Spoon the filling into the phyllo cups.
  6. Bake for 18–22 minutes, until the pastry is golden and the tops are lightly browned.
  7. Let cool for 5 minutes before serving.

Tips

  • Add chopped cooked bacon or ham for extra flavor.
  • Serve warm as an appetizer or party snack.
  • Garnish with fresh thyme leaves and a sprinkle of Parmesan.
