Garlic Butter Hasselback Potatoes (Crispy & Soft Inside)
Ingredients (serves 4)
- 4–6 medium potatoes (Yukon Gold or similar)
- 3–4 cloves garlic, thinly sliced
- 3 tbsp olive oil
- 40 g butter, melted
- Salt & black pepper, to taste
- 1 tsp paprika (optional)
- 1 tsp dried thyme or rosemary (optional)
- Fresh parsley, chopped (to finish)
Instructions
- Prep the potatoes
Wash and dry. Place each potato between two wooden spoons or chopsticks and slice thinly across—don’t cut all the way through. - Season
Mix olive oil, melted butter, garlic, salt, pepper, paprika, and herbs. Brush generously over and between the slices. - Bake
Place on a baking tray. Bake at 200°C (400°F) for 45–55 minutes, basting once or twice, until golden and crispy outside and tender inside. - Finish
Sprinkle with fresh parsley. Add a little extra butter if desired.
Tasty Variations
Cheesy: Add grated Parmesan or mozzarella in the last 10 minutes
Spicy: Sprinkle chili flakes or cayenne
Extra garlic: Rub with garlic butter right after baking
Loaded: Top with crispy bacon bits + sour cream
