🥔 Garlic Butter Hasselback Potatoes (Crispy & Soft Inside)

Ingredients (serves 4)

  • 4–6 medium potatoes (Yukon Gold or similar)
  • 3–4 cloves garlic, thinly sliced
  • 3 tbsp olive oil
  • 40 g butter, melted
  • Salt & black pepper, to taste
  • 1 tsp paprika (optional)
  • 1 tsp dried thyme or rosemary (optional)
  • Fresh parsley, chopped (to finish)

Instructions

  1. Prep the potatoes
    Wash and dry. Place each potato between two wooden spoons or chopsticks and slice thinly across—don’t cut all the way through.
  2. Season
    Mix olive oil, melted butter, garlic, salt, pepper, paprika, and herbs. Brush generously over and between the slices.
  3. Bake
    Place on a baking tray. Bake at 200°C (400°F) for 45–55 minutes, basting once or twice, until golden and crispy outside and tender inside.
  4. Finish
    Sprinkle with fresh parsley. Add a little extra butter if desired.

Tasty Variations

  • 🧀 Cheesy: Add grated Parmesan or mozzarella in the last 10 minutes
  • 🌶️ Spicy: Sprinkle chili flakes or cayenne
  • 🧄 Extra garlic: Rub with garlic butter right after baking
  • 🥓 Loaded: Top with crispy bacon bits + sour cream
