High-Protein Triple Berry Bake

Ingredients (Serves 4–6)

Base:

2 cups mixed berries (strawberries, blueberries, raspberries, blackberries)

3 cups bread cubes (or 1½ cups rolled oats for a gluten-free version)

Protein Custard:

4 large eggs

1 cup Greek yogurt (plain, high-protein)

1 cup milk (dairy or plant-based)

¼ cup honey or maple syrup

1 scoop vanilla protein powder (optional but recommended)

1 tsp vanilla extract

½ tsp cinnamon

Pinch of salt

Optional Toppings:

Extra berries

2 tbsp white chocolate chips or drizzle

Chopped nuts (almonds, pecans)

Preheat oven:

Set to 350°F (175°C). Lightly grease a baking dish.

Layer base:

Spread bread cubes (or oats) evenly in the dish. Scatter berries on top.

Mix custard:

In a bowl, whisk eggs, yogurt, milk, sweetener, protein powder, vanilla, cinnamon, and salt until smooth.

Combine:

Pour the custard over the bread and berries. Gently press down so everything absorbs the mixture.

Rest (optional but ideal):

Let sit for 10–15 minutes for better texture.

Bake:

Bake for 35–40 minutes until golden on top and set in the center.

Finish & serve:

Let cool slightly. Add toppings if desired and serve warm.
