Ingredients:

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • 1 large egg
  • 1/3 cup melted butter or vegetable oil
  • ½ cup brown sugar (or granulated sugar)
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (or dairy-free milk)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a mini loaf pan or line with parchment paper (or use a silicone pan as shown in the image).
  2. In a medium-sized bowl, mash the bananas with a fork until smooth and creamy.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
  4. In a separate large bowl, beat the egg and sugar together until light and fluffy. Add the melted butter (or oil) and vanilla extract, mixing well.
  5. Stir the mashed bananas into the wet ingredients and combine until smooth.
  6. Gradually add the dry ingredients into the wet mixture, stirring just until incorporated. Add milk as needed to get the desired batter consistency.
  7. Spoon the batter evenly into the mini loaf pan compartments, filling each about 3/4 full.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center of a loaf comes out clean.
  9. Once baked, let the mini loaves cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
