INGREDIENTS:

  • 1 sheet puff pastry, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 egg, beaten (for egg wash)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon sesame seeds(optional, for topping)

INSTRUCTIONS:

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the filling:
    • Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, cooking until softened (about 3-4 minutes).
    • Add the chopped spinach to the pan and cook until wilted, around 2-3 minutes. Remove from heat and let it cool slightly.
    • In a bowl, mix the ricotta, mozzarella, and Parmesan cheese. Add the cooled spinach mixture, salt, and pepper. Stir until well combined.
  3. Assemble the pastry:
    • Roll out the puff pastry on a lightly floured surface. If using a store-bought sheet, cut it into squares or rectangles, depending on your preferred size.
    • Place a spoonful of the spinach and cheese filling in the center of each pastry square.
    • Fold the pastry over the filling to create a pocket or rectangle. Seal the edges by pressing with a fork.
  4. Bake:
    • Brush the tops of the pastries with the beaten egg wash for a golden, shiny finish.
    • Sprinkle sesame seeds on top if desired.
    • Place the pastries on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and puffed up.
  5. Serve:
